It is cold here in the northeast ... time for lots of warm kitty cuddles
I posted this photo before. It is one of my favorites.
I love my kitties loving each other.
They have been snuggling with each other and with me a lot this week.

Since it is still Pumpkin Spice season, I enjoyed my annual cup of
Green Mountain Pumpkin Spice coffee this week.
As I said, I mostly like Pumpkin Spice in my baked goods,

But I also enjoy sampling the pumpkin spice goodies wherever I may find them.
So I thought it would be fun to show my favorite Pumpkin Spice Picks for 2019:
1st Place: Voortmann Pumpkin Spice Wafers
These are crunchy wafers filled with a creamy goodness that tastes sweet pumpkin custard.
My serving size: 3
2nd Place:Trader Joe's petite Pumpkin Spice Cookies
These are spicy sweet and are covered with a yogurt glaze and sprinkles.
I could do without the sugary sprinkles.
No sprinkles and these might have been Number 1.
My serving size: 2 because of the sweetness.
3rd Place: Milano Pumpkin Spice cookies
because it is hard to resist dark chocolate with anything.
My serving size: 2
Because it takes that second one for the flavors to really blend.
Runner-Up: Voortman Pumpkin Spice Cookies
These are a large shortbread type cookie,
not too sweet and a substantial snack.
One is enough with a cuppa.
I may try drizzling these with sugar glaze
or dipping the edge in dark chocolate.
With all this sweetness, I decided I should offer a healthy recipe:
I made roasted fall veggies with a roast this week to warm up the
house during our Arctic Blast:
Any fall veggies are good for this, even peeled cubed pumpkin.
I used carrots, butternut squash, sweet potato, red onion and garlic cloves.
I might have added cauliflower, if I had it,
or mushrooms, if son number one had not been dining with us,
as he evades all things mushroom.
Any kind of potatoes and root veggies are good here.
Add a cup or two of cooked chickpeas and you have a meatless meal.

The spices I like best are freeze-dried from LiteHouse Farms
parsley, chives, spring onions, etc.
I buy these in the veggie section and store them in the refrigerator
and I like them better than fresh because there is no waste.
I also use McCormick and added a little red pepper, smoked paprika and chili powder,
because the man who does not like mushrooms really likes hot sauce.
I only added about this much of each because the hub does not like too much spice.
I also added a good amount of fresh ground black pepper and some sea salt.
We set a bottle of hot sauce on the table when he joins us for dinner
but he did not apply it to this dish so I must have gotten the spices just nice.
Both he and my hubby scooped the rest of the veggies and beef into a take to work dish.

I drizzled with about 1/4 cup of olive oil and stirred
and dotted with two tablespoons of butter.
Then I covered and baked for about and hour and a half at 350F
which was how long the roast also needed.
The carrots are the last to tenderize so cut them smaller.
Sometimes I stir in a handful of kale or spinach for the last few minutes of baking time.
I forgot to take a photo when these came out of the oven and served.
We had beef roast with pan glaze,
the roasted veggies and steamed broccoli for our feast.
Yum!

Today is an apple crisp day so I have the apple harvest for which to be thankful.
I made his late last night for the hub to enjoy when he came in from work.

I don't care for all of the pumpkin spice items, but Voortman cookies are my favorite. Love roasted veggies and can go totally meatless with a meal like that.
ReplyDeleteI love pumpkin pie, but I am with Sharon, not much of a pumpkin spice fan. I do love a pumpkin bread with a cream cheese ribbon through it though....hmmmm. Your veggies look awesome.
ReplyDeleteI'm having apple spice granola at the moment. We got it at the last craft show and is it good! Your one dish veggie finale looks so so so good. I love roasted vegetables. And taking leftovers in for work lunches. You're making the most of the pumpkin season! Me too, lots of goodies at the moment! LeeAnna

ReplyDeleteHi Pat! Oooh - Voortman's anything is good in my book. Those wafer ones look yummy, yummy! As do the other ones that look rather like oatmeal - oh heck, all of them look yummy. That first photo of the kitties is so special. How nice that they get along so well. A friend of mine just got an electric bed for her kitty - she said it has an adjustment setting and her cat just adores it on these chilly days and nights. Happy Thursday! ~smile~ Roseanne

ReplyDeleteI have three or four aprons I rotate...have to wear one when cooking as I am so darn messy. Yours turned out beautifully, almost too nice for someone like me to use! Delicious food which I love to read about. Yes, the pumpkin spice is being added to more and more things each year it seems. Even beer. It's a spice I like as does Tony.

When you use chickpeas in your dish, do you use canned (I don't know much about chickpeas, so sorry for the dumb question). That recipe looks similar to some I have, so it will be fun to tweak mine a bit with your ideas. Thanks for sharing!
