Yesterday, I made this special cake for St. Patrick's Day.
This was a real treat!
Bailey's Irish Cream Cake
Preheat oven to 350F
Grease and flour 10 inch springform pan or two layer cake pans.
I like to use the springform pan and cut my own layers.
Cake:
3 cups flour
3 teaspoons baking powder
1 and 1/2 cups sugar
3 extra large eggs ( or 4 large eggs)
1/3 cup oil or melted butter
1/4 cup sour cream
3/4 cup milk
1/4 cup Bailey's Irish Cream
2 teaspoons French Vanilla (or regular vanilla)
Sift together dry ingredients. Beat eggs with oil or melted butter. Add milk, sour cream, Bailey's and vanilla. Mix until well combined.
Bake 10" Springform pan about 50 minutes or until tests done.
Adjust baking time as needed if you are using layer cake pans.
Bailey's Irish Buttercream Frosting:
1 cup (2 sticks) unsalted butter, softened to room temperature
1/4 cup white shortening (optional ... I think is helps stabilize the frosting and make it fluffier)
4 cups powdered sugar
2 teaspoons French Vanilla (or regular vanilla)
1/4 cup Bailey's Irish Cream
Beat all ingredients together until light and fluffy.
Split cooled 10" cake into two layers. Fill and frost.
Enjoy!
Note: Mr. Scrapatch likes French Vanilla.
If you like French Vanilla, you may buy French Vanilla Extract on Amazon.

This is a tough one for me because the only class I ever took was a short introduction to hand piecing about 15 years ago.
I have no idea where I might find the unfinished block I started.
I do remember that the instructor gently told me
that I needed to take smaller stitches.

Hi Pat! I am sorry to hear you are having eye issues. We are so dependent on them for everything but certainly sewing. Many hobbies have alternatives like 'reading' an audio book. Gosh, that Bailey's Irish Cream cake looks and sounds delicious.
